As you state there are many great sausages outside of Germany. At my local supermarket there is at least 12-18 different types. In the neighboring state of Louisiana, there are unique variations (cajun style called boudin). North of Houston, 'in the country', are many sausages made of game animials that a city boy like me can not even imagine.
When I was a boy growing up in New York City, we used to have a Hungarian sausage made of lamb guts and rice. I can't remember the name, but I remember it as special. My parents and grand parents were Hungarian.
